Ingredients

  • 12 oz dry macaroni
  • ¼ cup butter 🧈
  • ¼ cup flour 🌾
  • 1½ cups milk 🥛
  • 1 cup light cream (10–12% MF)
  • ½ tsp dry mustard powder
  • 1 tsp onion powder
  • Salt & black pepper, to taste 🧂
  • 1 can condensed cream of cheddar soup (optional, 10.75 oz)
  • 4 cups sharp cheddar cheese, divided 🧀
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook the pasta
    Cook macaroni in salted water until al dente.
    Drain and set aside.
  2. Make the roux
    In a large saucepan, melt butter over medium heat.
    Whisk in flour and cook for about 1 minute until smooth and bubbly.
  3. Add the dairy
    Slowly whisk in milk and light cream.
    Cook, whisking constantly, until the sauce thickens.
  4. Season the sauce
    Add dry mustard, onion powder, salt, and pepper.
    Stir well.
  5. Add the cheese
    Reduce heat to low.
    Stir in 3 cups cheddar and Parmesan until melted and smooth.
    If using, stir in the condensed cream of cheddar soup.
  6. Combine
    Add cooked macaroni and mix until fully coated.
  7. Optional baked finish
    Transfer to a baking dish, top with remaining 1 cup cheddar,
    and bake at 190°C (375°F) for 20 minutes until bubbly and lightly golden.
