🇭🇺 Hearty Hungarian Mushroom Soup (Gombaleves)

Ingredients

  • 1 lb (450 g) fresh mushrooms, sliced
  • 2 tbsp butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp Hungarian sweet paprika
  • 1 tsp dried thyme
  • 2 tbsp all-purpose flour
  • 2 cups vegetable or chicken broth
  • 1 cup milk
  • ½ cup sour cream
  • 1 tbsp soy sauce
  • 1 tbsp fresh dill (or 1 tsp dried)
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until soft. Stir in garlic and cook 30 seconds.
  2. Add mushrooms and cook until tender and juices release (8–10 minutes).
  3. Stir in paprika and thyme.
  4. Sprinkle flour over mixture and cook 1–2 minutes.
  5. Gradually add broth while stirring. Add soy sauce and simmer 10 minutes.
  6. Reduce heat. Stir in milk, sour cream, and dill. Simmer gently (do not boil).
  7. Season with salt and pepper. Serve warm.
