ðŸ‡ðŸ‡º Hearty Hungarian Mushroom Soup (Gombaleves)
Ingredients
- 1 lb (450 g) fresh mushrooms, sliced
- 2 tbsp butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp Hungarian sweet paprika
- 1 tsp dried thyme
- 2 tbsp all-purpose flour
- 2 cups vegetable or chicken broth
- 1 cup milk
- ½ cup sour cream
- 1 tbsp soy sauce
- 1 tbsp fresh dill (or 1 tsp dried)
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until soft. Stir in garlic and cook 30 seconds.
- Add mushrooms and cook until tender and juices release (8–10 minutes).
- Stir in paprika and thyme.
- Sprinkle flour over mixture and cook 1–2 minutes.
- Gradually add broth while stirring. Add soy sauce and simmer 10 minutes.
- Reduce heat. Stir in milk, sour cream, and dill. Simmer gently (do not boil).
- Season with salt and pepper. Serve warm.
