Ingredients
- 4 large potatoes, peeled and diced
- 1 large onion, chopped

- 1–2 tablespoons sweet Hungarian paprika
- 1 carrot, diced (optional)

- 4 cups (1 L) water or vegetable broth
- Salt and black pepper, to taste
- 1 teaspoon caraway seeds (optional)

Directions
- Heat oil in a large pot over medium heat. Sauté onions until soft and golden.
- Remove from heat and stir in paprika (prevents burning).
- Add diced potatoes, carrot, and bell pepper. Stir to coat with paprika.
- Pour in water or broth, add caraway seeds if using. Bring to a boil.
- Reduce heat, cover, and simmer 20–25 minutes until potatoes are tender.
- Season with salt and pepper.
- Serve hot, optionally with a dollop of sour cream.
