🇭🇺 Paprika Potatoes (Paprikás Krumpli)
Ingredients
- 2 lbs (1 kg) potatoes, peeled and diced
- 1 large onion, chopped
- 2 tablespoons oil or lard
- 1–2 teaspoons Hungarian sweet paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 bell pepper, chopped
- 1 tomato, chopped (or ½ cup canned tomatoes)
- 2–3 cups water or broth
- Optional: sliced smoked sausage (kolbász)
Instructions
- Heat oil or lard in a pot over medium heat.
- Add onions and cook until translucent.
- Remove from heat and stir in paprika to prevent burning.
- Add potatoes, bell pepper, tomato, salt, and pepper.
- Pour in water or broth to just cover the potatoes.
- Bring to a boil, then reduce heat and simmer 25–30 minutes until potatoes are tender.
- If using sausage, add in the last 10 minutes of cooking.
- Adjust seasoning and serve hot, often with bread.
