🇭🇺 Paprika Potatoes (Paprikás Krumpli)

Ingredients

  • 2 lbs (1 kg) potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 tablespoons oil or lard
  • 1–2 teaspoons Hungarian sweet paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 bell pepper, chopped
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 2–3 cups water or broth
  • Optional: sliced smoked sausage (kolbász)

Instructions

  1. Heat oil or lard in a pot over medium heat.
  2. Add onions and cook until translucent.
  3. Remove from heat and stir in paprika to prevent burning.
  4. Add potatoes, bell pepper, tomato, salt, and pepper.
  5. Pour in water or broth to just cover the potatoes.
  6. Bring to a boil, then reduce heat and simmer 25–30 minutes until potatoes are tender.
  7. If using sausage, add in the last 10 minutes of cooking.
  8. Adjust seasoning and serve hot, often with bread.
