Hungarian Vegetable Soup (Zöldségleves)

Ingredients

  • 1 onion, peeled
  • 2 carrots
  • 1 parsnip
  • 2 potatoes
  • 1 small piece of cabbage
  • 2 cloves garlic
  • 2 tablespoons oil
  • Salt and black pepper to taste
  • 1.5 liters water or vegetable stock
  • Fresh parsley

Instructions

  1. Heat oil in a large pot and lightly sauté the onion.
  2. Add garlic and stir briefly.
  3. Add carrots, parsnip, potatoes, and cabbage.
  4. Pour in water or vegetable stock.
  5. Season with salt and black pepper.
  6. Simmer on medium heat for 30–40 minutes until vegetables are tender.
  7. Taste and adjust seasoning.
  8. Finish with fresh parsley before serving.
