Hungarian Vegetable Soup (Zöldségleves)
Ingredients
- 1 onion, peeled
- 2 carrots
- 1 parsnip
- 2 potatoes
- 1 small piece of cabbage
- 2 cloves garlic
- 2 tablespoons oil
- Salt and black pepper to taste
- 1.5 liters water or vegetable stock
- Fresh parsley
Instructions
- Heat oil in a large pot and lightly sauté the onion.
- Add garlic and stir briefly.
- Add carrots, parsnip, potatoes, and cabbage.
- Pour in water or vegetable stock.
- Season with salt and black pepper.
- Simmer on medium heat for 30–40 minutes until vegetables are tender.
- Taste and adjust seasoning.
- Finish with fresh parsley before serving.
