Hungarian Green Pea Soup with Dumplings (Zöldborsóleves Galuskával)
Ingredients
- 2 tablespoons oil or butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 500 g (3 cups) green peas (fresh or frozen)
- 1 teaspoon sweet Hungarian paprika
- 1.5 liters (6 cups) vegetable or chicken broth
- Salt and black pepper to taste
- Fresh parsley, chopped
For the Dumplings (Galuska):
- 1 cup (125 g) all-purpose flour
- 1 egg
- 2–3 tablespoons water
- Pinch of salt
Instructions
- Heat oil in a large pot over medium heat.
- Add chopped onion and sauté until soft.
- Stir in garlic and cook for 1 minute.
- Remove from heat briefly and stir in paprika.
- Add carrots, bell pepper, and green peas.
- Pour in broth and bring to a boil.
- Reduce heat and simmer for 15 minutes until vegetables are tender. Season with salt and pepper.
Prepare the Dumplings:
8. In a bowl, mix flour, egg, salt, and enough water to form a soft, sticky dough.
9. Using a spoon, drop small pieces of dough into the simmering soup.
10. Cook for 3–5 minutes until dumplings float to the surface.
- Garnish with fresh parsley and serve hot.
