Hungarian Goulash Soup (Gulyásleves)

Ingredients

  • 2 tbsp lard or oil
  • 2 large onions, finely chopped
  • 2 tbsp Hungarian sweet paprika
  • ½ tsp caraway seeds
  • 1 lb (450 g) beef chuck, cubed
  • 2 cloves garlic, minced
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 1 tbsp tomato paste (optional)
  • Salt and black pepper, to taste
  • 1 tsp hot paprika (optional)
  • 8–9 cups water or beef broth
  • 2 carrots, sliced
  • 2 potatoes, diced

Optional csipetke:

  • 1 egg
  • ½ cup flour
  • Pinch of salt

Instructions

  1. Heat lard or oil; cook onions until soft.
  2. Remove from heat, stir in paprika and caraway.
  3. Add beef, garlic, tomato, pepper, tomato paste, salt, pepper, and hot paprika.
  4. Add water/broth, bring to boil.
  5. Simmer covered 60–75 minutes.
  6. Add carrots and potatoes; cook 20–25 minutes.
  7. Add csipetke and cook 5–7 minutes until done.
