Hungarian Frankfurter Soup (Frankfurti Leves)

Ingredients

  • 6–8 frankfurter sausages, sliced
  • 2 tablespoons oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 2 medium potatoes, diced
  • 1 carrot, sliced
  • 1 tomato, peeled (or 1 small whole tomato)
  • 1.5 liters (6 cups) vegetable or chicken broth
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon dried marjoram
  • Salt and black pepper to taste
  • 1 cup thin egg noodles (optional)
  • Fresh parsley, chopped

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft and translucent.
  3. Add garlic and cook for 1 minute.
  4. Remove the pot briefly from heat and stir in paprika (to prevent burning).
  5. Return to heat and add diced potatoes, carrot, tomato, caraway seeds, and marjoram.
  6. Pour in the broth and bring to a boil.
  7. Reduce heat and simmer for 15–20 minutes, until vegetables are tender.
  8. Add sliced frankfurters and noodles (if using). Cook for another 5–7 minutes.
  9. Season with salt and black pepper.
  10. Garnish with fresh parsley and serve hot.
