Hungarian Cucumber Salad (Uborkasaláta)

  • 2 large cucumbers, thinly sliced
  • 1 small red onion, very thinly sliced (optional)
  • 1 teaspoon salt
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 3 tablespoons cold water
  • 1 clove garlic, minced
  • ½ teaspoon black pepper
  • 1 teaspoon sweet Hungarian paprika (optional)
  • 2 tablespoons sour cream (optional, for creamy version)

Instructions

  1. Slice the cucumbers very thin (using a knife or mandoline).
  2. Place in a bowl, sprinkle with salt, and let sit for 15–20 minutes to release excess water.
  3. Gently squeeze out excess liquid from the cucumbers.
  4. In a small bowl, mix vinegar, sugar, water, garlic, and black pepper until sugar dissolves.
  5. Pour dressing over cucumbers and add sliced onion if using. Mix well.
  6. Sprinkle with paprika if desired.
  7. For a creamy version, stir in sour cream before serving.
  8. Chill for at least 30 minutes before serving.
