Ingredients
Crust:
- 2 cups (250 g) all-purpose flour
- ½ cup (115 g) unsalted butter, cold and cubed
- ¼ cup sugar
- 1 egg yolk
- 2–3 tablespoons cold water
Filling:
- 2 cups (500 g) quark or farmer’s cheese
- ½ cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest (optional)
- 2 tablespoons semolina (optional, for thicker filling)
Topping (optional):
- Powdered sugar for dusting
Directions
- Preheat oven to 350°F (175°C). Grease a 9-inch (23 cm) pie pan.
- Make crust: Combine flour, sugar, and butter until crumbly. Add egg yolk and cold water, mix into dough. Press into prepared pan and set aside.
- Prepare filling: In a bowl, mix cheese, sugar, egg, vanilla, lemon zest, and semolina until smooth.
- Pour filling over crust and smooth the top.
- Bake 35–40 minutes until filling is set and lightly golden.
- Cool slightly, then dust with powdered sugar before serving.
