Hungarian Cabbage and Noodles (Káposztás Tészta)

Ingredients

  • 400 g (14 oz) wide egg noodles (or square pasta)
  • 600 g (1½ lbs) white cabbage, finely shredded
  • 2 tablespoons oil or lard
  • 1 teaspoon sugar
  • Salt to taste
  • ½ teaspoon black pepper (freshly ground)

Instructions

  1. Cook noodles in salted boiling water according to package instructions. Drain and set aside.
  2. Heat oil or lard in a large pan over medium heat.
  3. Add sugar and let it caramelize lightly (golden brown).
  4. Add shredded cabbage and stir well to coat with caramelized sugar.
  5. Cook on medium heat for 20–30 minutes, stirring occasionally, until cabbage becomes soft and slightly browned.
  6. Season generously with salt and black pepper.
  7. Add cooked noodles to the cabbage and mix thoroughly.
  8. Cook together for another 2–3 minutes.

Serve hot.
