  • 1 cup graham cracker crumbs (use a rolling pin or food processor to crush finely)
  • ½ cup melted butter
  • ¼ cup sugar (optional)

For the Cheesecake Filling:

  • 450 g (1 lb) cream cheese, softened
  • ¾ cup sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ½ cup sour cream or heavy cream

For the Blueberry Topping:

  • 2 cups fresh blueberries
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch (optional, for thickening)

👩‍🍳 Instructions

1️⃣ Prepare the Crust

  • Preheat oven to 175°C / 350°F.
  • Mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press mixture firmly into the bottom of a 9-inch springform pan.
  • Bake 8–10 minutes and let cool.

2️⃣ Make the Cheesecake Filling

  • Beat cream cheese and sugar until smooth.
  • Add vanilla, then eggs one at a time, mixing gently.
  • Stir in sour cream or heavy cream until fully combined.
  • Pour over the cooled crust.

3️⃣ Bake the Cheesecake

  • Bake at 175°C / 350°F for 40–45 minutes, until the center is almost set.
  • Turn off oven, leave cheesecake inside with the door slightly open for 10 minutes to prevent cracking.
  • Cool to room temperature, then refrigerate for at least 4 hours (or overnight).

4️⃣ Prepare the Blueberry Topping

  • In a small saucepan, combine blueberries, sugar, and lemon juice.
  • Cook over medium heat until blueberries release juices.
  • Optional: mix cornstarch with a little water and add to the pan to thicken.
  • Let cool, then pour over chilled cheesecake.
