Hungarian Creamed Peas (Tejfölös Zöldborsó)

Ingredients

  • 500 g (3 cups) green peas (fresh or frozen)
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 small onion, finely chopped
  • 1 tablespoon flour
  • 250 ml (1 cup) milk
  • 2–3 tablespoons sour cream
  • 1 teaspoon sugar
  • Salt and white pepper to taste
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a saucepan, melt butter with oil over medium heat.
  2. Add chopped onion and sauté until soft and translucent.
  3. Stir in flour and cook for 1 minute to form a light roux (do not brown).
  4. Gradually whisk in milk to create a smooth sauce. Cook until slightly thickened.
  5. Add peas, sugar, salt, and pepper. Simmer for 5–10 minutes (until peas are tender).
  6. Stir in sour cream and cook for 1–2 more minutes.
  7. Sprinkle with fresh parsley before serving.

Serve warm as a side dish with fried meat, schnitzel, or roasted chicken.
