Hungarian Cucumber Salad (Uborkasaláta)

  • 2 large cucumbers, very thinly sliced
  • 1 teaspoon salt
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 3 tablespoons cold water
  • 1 clove garlic, crushed
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon sweet Hungarian paprika (optional)
  • 2–3 tablespoons sour cream (optional, for creamy version)

Instructions

  1. Thinly slice the cucumbers (use a knife or mandoline).
  2. Place in a bowl, sprinkle with salt, and let sit for 15–20 minutes to release excess liquid.
  3. Gently squeeze out the extra water.
  4. In a small bowl, mix vinegar, sugar, water, garlic, and black pepper until sugar dissolves.
  5. Pour dressing over cucumbers and mix well.
  6. Sprinkle with paprika if desired.
  7. For a creamy version, stir in sour cream before serving.
  8. Chill for at least 30 minutes before serving.
