Ingredients

  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 tablespoons oil or lard
  • 1–2 tablespoons sweet Hungarian paprika
  • 1 carrot, diced (optional)
  • 1 green bell pepper, diced (optional)
  • 4 cups (1 L) water or vegetable broth
  • Salt and black pepper, to taste
  • 1 teaspoon caraway seeds (optional)
  • ½ cup sour cream (optional, for serving)

Directions

  1. Heat oil in a large pot over medium heat. Sauté onions until soft and golden.
  2. Remove from heat and stir in paprika (prevents burning).
  3. Add diced potatoes, carrot, and bell pepper. Stir to coat with paprika.
  4. Pour in water or broth, add caraway seeds if using. Bring to a boil.
  5. Reduce heat, cover, and simmer 20–25 minutes until potatoes are tender.
  6. Season with salt and pepper.
  7. Serve hot, optionally with a dollop of sour cream.
