A hearty Hungarian stew featuring tender beans, smoky sausage, and rich paprika flavors — perfect for a filling, comforting meal.


Ingredients

  • 2 cups dried white beans (or 3 cups cooked/canned beans)
  • 1 lb (450 g) smoked Hungarian sausage (kolbász), sliced
  • 2 tablespoons oil or lard
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 green bell pepper, chopped
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 6 cups water or broth

Directions

  1. If using dried beans, soak overnight and drain. Boil until tender, about 45–60 minutes.
  2. In a large pot, heat oil and sauté onions until golden. Add garlic and cook 30 seconds.
  3. Remove from heat and stir in paprika to prevent burning.
  4. Add sausage, green pepper, tomato, caraway seeds, salt, and pepper. Mix well.
  5. Pour in water or broth and bring to a boil. Reduce heat and simmer 30–40 minutes, until flavors meld.
  6. Add cooked beans and simmer another 10 minutes. Adjust seasoning.

Serve hot with fresh bread — a traditional, filling Hungarian dish! 🇭🇺
