Hungarian Green Pea Soup with Dumplings (Zöldborsóleves Galuskával)

Ingredients

  • 2 tablespoons oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 500 g (3 cups) green peas (fresh or frozen)
  • 1 teaspoon sweet Hungarian paprika
  • 1.5 liters (6 cups) vegetable or chicken broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped

For the Dumplings (Galuska):

  • 1 cup (125 g) all-purpose flour
  • 1 egg
  • 2–3 tablespoons water
  • Pinch of salt

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft.
  3. Stir in garlic and cook for 1 minute.
  4. Remove from heat briefly and stir in paprika.
  5. Add carrots, bell pepper, and green peas.
  6. Pour in broth and bring to a boil.
  7. Reduce heat and simmer for 15 minutes until vegetables are tender. Season with salt and pepper.

Prepare the Dumplings:
