Ingredients
For the Dough:
- 250 g (1 cup) unsalted butter, softened
- 200 g (7 oz) cream cheese, softened
- 2 cups (250 g) all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
For the Filling:
- Thick plum jam (traditional) or apricot jam
Instructions
- In a large bowl, cream together the butter and cream cheese until smooth.
- Add flour, sugar, vanilla extract, and salt. Mix until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30–60 minutes.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Roll out the chilled dough on a lightly floured surface to about 3 mm (⅛ inch) thickness.
- Cut the dough into small squares (about 5–6 cm / 2 inches).
- Place about 1 teaspoon of jam in the center of each square.
- Fold two opposite corners toward the center, slightly overlapping them over the filling.
- Place the cookies on the prepared baking sheet.
- Bake for 15–20 minutes, or until lightly golden.
Allow to cool before serving. Optionally, dust with powdered sugar.
