🥣 Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (225g) unsalted butter, softened
- ½ cup (100g) powdered sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 pinch of salt
- ½ teaspoon lemon zest (optional)
- ½ cup apricot jam (traditional filling)
👩🍳 Instructions:
- Prepare the dough:
In a bowl, cream together the butter and powdered sugar until light and fluffy.
Add the egg yolk, vanilla extract, salt, and lemon zest. Mix well.
Gradually add the flour and mix until a soft dough forms. - Chill the dough:
Wrap the dough in plastic wrap and refrigerate for 30–60 minutes. - Roll and cut:
Preheat the oven to 350°F (175°C).
Roll out the dough on a floured surface (about 3–4 mm thick).
Cut out round shapes. In half of them, cut a small hole in the center. - Bake:
Place on a lined baking sheet and bake for 8–12 minutes, until lightly golden on the edges.
Let cool completely. - Fill and assemble:
Spread apricot jam on the bottom cookies (without holes).
Place the top cookies (with holes) over them to form sandwiches. - Serve:
Optionally dust with powdered sugar.
