Hungarian Linzer Cookies

🥣 Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (225g) unsalted butter, softened
  • ½ cup (100g) powdered sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • ½ teaspoon lemon zest (optional)
  • ½ cup apricot jam (traditional filling)

👩‍🍳 Instructions:

  1. Prepare the dough:
    In a bowl, cream together the butter and powdered sugar until light and fluffy.
    Add the egg yolk, vanilla extract, salt, and lemon zest. Mix well.
    Gradually add the flour and mix until a soft dough forms.
  2. Chill the dough:
    Wrap the dough in plastic wrap and refrigerate for 30–60 minutes.
  3. Roll and cut:
    Preheat the oven to 350°F (175°C).
    Roll out the dough on a floured surface (about 3–4 mm thick).
    Cut out round shapes. In half of them, cut a small hole in the center.
  4. Bake:
    Place on a lined baking sheet and bake for 8–12 minutes, until lightly golden on the edges.
    Let cool completely.
  5. Fill and assemble:
    Spread apricot jam on the bottom cookies (without holes).
    Place the top cookies (with holes) over them to form sandwiches.
  6. Serve:
    Optionally dust with powdered sugar.
