  • 2 tbsp flour
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup (225 g) unsalted butter, softened

Optional Chocolate Glaze (traditional topping):

  • 3 oz (90 g) dark chocolate, chopped
  • 2 tbsp butter

🍳 Instructions

1️⃣ Make the honey dough

  1. In a saucepan, gently heat honey, butter, and sugar just until melted and combined.
  2. Remove from heat and let cool slightly.
  3. In a large bowl, mix flour and baking soda.
  4. Add the egg, milk, and the warm honey mixture.
  5. Stir until a soft, slightly sticky dough forms.
  6. Divide into 4 equal parts and roll each into a thin rectangle (about 9×13 inches / 23×33 cm).
  7. Bake each layer on parchment paper at 350°F (175°C) for about 6–8 minutes, until golden brown.
  8. Let them cool completely — they’ll firm up as they cool.

2️⃣ Make the custard cream

  1. In a saucepan, whisk together flour, cornstarch, sugar, and milk.
  2. Cook over medium heat, stirring constantly, until thick and smooth.
  3. Remove from heat, add vanilla, and let it cool completely.
  4. In a bowl, beat the butter until creamy, then gradually add the cooled custard mixture.
  5. Mix until smooth and silky.

3️⃣ Assemble the cake

  1. Place one honey layer on a tray, spread with cream.
  2. Add the second layer, spread with more cream.
  3. Continue until all layers are used — the top layer stays plain (for glaze or sugar).
  4. Press gently and chill overnight in the fridge so the layers soften beautifully.
