🛒 Ingredients
Sponge Cake Layers:
- 6 large eggs, separated
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- Pinch of salt
Chocolate Buttercream:
- 7 oz (200g) dark chocolate, melted and cooled
- 1 cup unsalted butter, softened
- ¾ cup powdered sugar
Caramel Topping:
- ½ cup granulated sugar

1️⃣ Make the Sponge Layers
- Preheat oven to 375°F (190°C).
- Beat egg yolks with half the sugar until pale. Add vanilla.
- Beat egg whites with salt, gradually adding remaining sugar until stiff peaks form.
- Gently fold whites into yolks.
- Fold in sifted flour carefully.
- Spread thin circles (8-inch) on parchment-lined trays.
- Bake each layer 6–8 minutes until lightly golden. Cool completely.
2️⃣ Prepare the Buttercream
- Beat butter until fluffy.
- Add powdered sugar and mix well.
- Add melted chocolate and beat until smooth and creamy.
3️⃣ Assemble the Cake
- Stack layers, spreading chocolate buttercream between each.
- Reserve one layer for the caramel top.
4️⃣ Make the Caramel
- Melt sugar in a pan over medium heat until golden amber.
- Quickly pour over the reserved sponge layer and spread evenly.
- While still warm, cut into wedges using a greased knife.
5️⃣ Finish
- Place caramel wedges on top of the cake.
- Chill slightly before slicing.
