  • 12–14 small plums, pitted
  • ½ cup (100g) sugar (for plums)
  • 2 cups (250g) all-purpose flour
  • 2 cups (500g) mashed potatoes (cooled)
  • 1 egg
  • Pinch of salt
  • ½ cup (100g) butter
  • 1 cup (100g) breadcrumbs
  • Powdered sugar for serving
  • Optional: cinnamon sugar

Instructions

  1. Prepare the Plums:
    Pit plums and fill each with a teaspoon of sugar (and a pinch of cinnamon if desired).
  2. Make the Dough:
    Mix mashed potatoes, flour, egg, and salt into a smooth, pliable dough.
  3. Wrap the Plums:
    Take a portion of dough, flatten, and wrap around each plum, sealing completely.
  4. Cook the Dumplings:
    Bring a large pot of salted water to a gentle boil.
    Drop dumplings carefully and cook 8–10 minutes, until they float to the top.
  5. Prepare the Coating:
    Melt butter in a pan, add breadcrumbs, and toast until golden brown.
  6. Serve:
    Roll cooked dumplings in buttered breadcrumbs and dust with powdered sugar. Serve warm.
