🇭🇺 Hungarian Beef Stew (Marhapörkölt)

Ingredients

  • 2 lbs (1 kg) beef chuck, cut into cubes
  • 2 large onions, finely chopped
  • 2 tablespoons lard or oil
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon hot paprika (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 1 bell pepper, chopped
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1–1½ cups water or beef broth

Instructions

  1. Heat lard or oil in a heavy pot over medium heat.
  2. Add chopped onions and cook slowly until soft and golden.
  3. Remove pot from heat and stir in paprika (to prevent burning).
  4. Add beef cubes and mix well to coat.
  5. Return to heat. Add salt, pepper, caraway seeds, bell pepper, and tomato.
  6. Pour in enough water or broth to partially cover the meat.
  7. Cover and simmer gently for 1½–2 hours, stirring occasionally, until beef is tender and sauce is thick.
  8. Adjust seasoning if needed.
