🇭🇺 Goulash (Gulyás)

Ingredients

  • 2 lbs (900 g) beef chuck, cut into cubes
  • 2 tablespoons oil or lard
  • 2 medium onions, finely chopped
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon caraway seeds (optional)
  • 2 cloves garlic, minced
  • 1 tomato, chopped (or ½ cup canned tomatoes)
  • 1 green pepper, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 5–6 cups water or beef broth

Directions

  1. Heat oil in a large pot. Sauté onions until soft and golden.
  2. Remove from heat and stir in paprika (to prevent burning).
  3. Add beef cubes and stir to coat. Return to heat.
  4. Add garlic, tomato, green pepper, salt, pepper, and caraway. Cook 5 minutes.
  5. Pour in water or broth to cover. Bring to a boil, then reduce heat and simmer 60–90 minutes until beef is tender.
  6. Add carrots and potatoes. Continue simmering 20–25 minutes until vegetables are soft.
  7. Adjust seasoning and serve hot.
