Surprise everyone with this classic French dessert that looks fancy but is actually easy to make. Light, airy éclairs filled with smooth vanilla custard… one bite and everyone will ask for the recipe 😍
🧁 Ingredients
For the Custard Cream (enough for 11–12 éclairs):
- 2 eggs
- 70 g (2.4 oz) sugar
- 30 g (1 oz) cornstarch
- 500 ml (2 cups) milk
- 1 teaspoon vanilla extract
- 20 g (1½ tbsp) butter
For the Choux Pastry (Éclair Dough):
- 125 ml (½ cup) water
- 125 ml (½ cup) milk
- 100 g (7 tbsp) butter
- 1 tablespoon sugar
- 1 pinch of salt
- 150 g (1¼ cups) all-purpose flour
- 4 eggs (medium)
Optional Chocolate Glaze:
- 100 g (3.5 oz) dark chocolate
- 1 tablespoon butter
- 2 tablespoons heavy cream
👩🍳 Instructions
1️⃣ Make the Custard Cream
- In a bowl, whisk eggs, sugar, and cornstarch until smooth.
- Heat the milk until hot (not boiling).
- Slowly pour the hot milk over the egg mixture while whisking.
- Return everything to the pan and cook on medium heat, stirring constantly, until thick.
- Remove from heat, add vanilla and butter, mix well.
- Cover with plastic wrap (touching the surface) and let it cool completely.
2️⃣ Prepare the Choux Pastry
- In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir quickly until the dough pulls away from the pan.
- Let the dough cool for 5 minutes.
- Add eggs one by one, mixing well after each egg until smooth and glossy.
3️⃣ Shape & Bake
- Preheat oven to 180°C (350°F).
- Transfer dough to a piping bag and pipe éclair shapes onto a lined baking tray.
- Bake for 30–35 minutes until golden and puffed.
- Let them cool completely before filling.
4️⃣ Fill the Éclairs
- Fill a piping bag with the custard cream.
- Make small holes in the éclairs and pipe the cream inside.
5️⃣ Chocolate Glaze (Optional but Amazing 😍)
- Melt chocolate, butter, and cream together.
- Dip the tops of the éclairs into the glaze.
- Let set before serving.
